Hananomai Sake

Hananomai was established in 1864, over 150 years. “Hananomai” means “flower dance”. This name originates from a local traditional dance which was performed to celebrate a rich harvest. So Hananomai sae has an elegant flora aroma and the smooth, fruity taste is followed by a crisp light sweetness. Hananomai sake is regarded highly in Shizuoka and throughout the whole of Japan. In the annual national sake contest, Hananomai achieved a gold prize 6 times. Moreover, Hananomai has won gold prize in the “Monde Selection” in Belgium for the last few years.

We have contracts with 47 farmers to grow a variety of rice called “yamadanishiki”. ” Yamadanishiki” is considered the best kind of rice for brewing sake. It can be grown only in good earth and is notoriously difficult to produce a top quality crop. Of course Hananomai brewery insists on the highest standards.

The water which we use to make our sake is from the southern Japan Alps. We get natural, fresh water from a distance of over 100m underground. This water is soft and pure.

Every brewing company has a leader who adjusts the taste of the sake. This position is called “Touji” and is very important for each company.

Usually this position is filled by and experience person who has a long history of employment in the company. Ten years ago we appointed a new Touji. His new approach and skills have helped Hananomai in recent success in attaining many awards.
